Tortellini with Vodka Cream Sauce

And Prosciutto Rosettes

Served 6-8


1 28 ounces can of whole canned tomatoes, good quality like San Marzano tomatoes
3 ounces, or ½ a small can of tomato paste
1/3 C white onion, diced small
2 large cloves of garlic, chopped finely
3 T olive oil
¼ C chili flakes
1 t cayenne pepper (red pepper)
5 ounces good vodka
3 ounces water
2 very large sprigs of basil, with at least
10-12 leaves. Reserve
one for cutting to
use as garnish, the other leave whole for nesting in the sauce while cooking
½ C heavy cream
Salt and pepper to taste (About 2 T kosher salt and ½ t cracked pepper)
Fresh grated parmesan cheese to garnish
4 cups uncooked stuffed tortellini (I chose sausage stuffed)
20 ounces of fresh prosciutto, or enough to create a little serving for each pasta dish.
