Vegetable and Fruit Quinoa Salad

With Red Wine Vinaigrette

Serves 12


Ingredients:

3 C cooked quinoa, cooled
½ large English cucumber diced
2 celery stalks, diced
2 large navel
oranges peeled and cut into small sections
Juice of half and orange
2 large Fuji apples diced
¼ C red onion sliced thin
¾ pint of cherry tomatoes, halved
Handful chopped fresh cilantro
3-4 T or more of red wine vinegar and light oil to
your desired consistency
1 t kosher salt and ½ t black pepper to taste


Method:

  • Toss and let sit for about an hour before serving.
  • Can add protein to this such as shrimp, chicken, or salami.
