Tuscan Bean Bruschetta

Serves 4 – 6


1 half of French baguette sliced into 1/2” slices
1 can northern beans drained and rinsed
10-12 cherry tomatoes quartered
½ large orange bell pepper diced
¼ C red onion diced
3 cloves garlic chopped finely
¼ C rough chopped Italian parsley
1 heaping t of Herbs de Provence seasoning
2 T good olive oil
2 T white wine vinegar
½ t kosher salt
¼ t black pepper


  • Add rinsed beans and all other ingredients to a glass bowl and blend well. Let sit for about 2 hours before serving on toasted baguette pieces broiled with olive oil brushed on one side.
