Tomato, Cucumber, Chickpea Salad

Serves 4 – 6 | Beautiful colors and stunning flavors with only minutes of work.

INGREDIENTS:

¾ large English cucumber thinly sliced

1/3 red onion, thinly sliced

4 brown heirloom tomatoes cut into big chunks

8 ounces of chick peas, drained

2 T rough chopped parsley

1 t kosher salt + ½ t black pepper

3 – 4 T good olive oil, plus 1 – 2 T champagne vinegar

 

METHOD:

Toss all, serve immediately.
