Roasted Peppers, Onions, and Mushrooms

With Rosemary Butter

Serves 12


1 yellow, red, and orange pepper cut into large chunks
1 pint large mushrooms such as baby Bella, halved
1 medium white sweet onion cut into large chunks
4 T unsalted butter
2 t fresh rosemary finely chopped
2 T light oil


  • Toss with about 2 T light oil and dust with kosher salt and black pepper. Roast in a 450 degree F oven for about 20 minutes. Remove, let come to room temperature. Melt the rosemary butter and pour over just before serving.
  • Can add protein to this such as shrimp, chicken, or salami.
