Easy Quarantine Beef Vegetable Soup

Serves 8


1.5 lbs beef round chunks (stew meat) 6 C water
1 can diced tomatoes 3 T light oil
3 C carrots diced
3 C potatoes diced
1/3 C chopped white onion 4 large garlic cloves
3 large stalk celery 1 bay leaf
1 t Montreal steak seasoning 2 2 dried parsley
Salt and pepper throughout. Always check before serving!


  • Prep all ingredients.
  • Heat a large Dutch oven and add the oil. When hot add the celery, carrots, and onion. Stir until onions are translucent. About 3 minutes. Add the beef and stir and let it begin to brown. Let brown for about 3 minutes. Add the garlic and stir and cook until fragrant. Add the water, potatoes, bay leaf,
    seasoning and can of tomatoes. Add about 2 t salt and ½ pepper. Bring to a boil and let simmer on low bubble for about 70 minutes. Check and season as needed. Serve.
