Dijon Herb Marinade

A beautiful marinade for beef or pork.

Ingredients:

½ C olive oil
3/8 C red wine vinegar
2 T fresh oregano leaves
1 T fresh rosemary leaves
3 T fresh parsley leaves
Zest from one lemon
2 T Dijon mustard
2 t Worcestershire sauce
2 t Sriracha sauce
½ t black pepper
½ t kosher salt
2 huge garlic cloves


Method:

  • Add all ingredients to a small food processor and blend until fairly smooth but not pureed. Pour into a large baggie and place meat inside and seal. Let marinate for at least 7 hours, up to 24 hours. When ready, take out meat and scrape off all the marinade. Place the marinade liquid into a small pan and heat slowly to serve as a sauce over the meat. Be sure to bring meat to room temperature before grilling or sautéing for best results.
