Best Basic Banana Bread Muffins

Bananas, repurposed! Quick, easy, and moist.


Ingredients:

2 C all-purpose flour
2 t baking powder
½ t salt
¼ C brown sugar
½ C sugar
2 t vanilla
¼ C melted butter
1 egg
1/4 C (plus more if needed) of whole milk or half n half
2 very ripe bananas (about 1 1/3 C but will vary)
Extra butter to grease muffin tins


Direction:

  • Grease the inside of the muffin tin, regular size. Preheat oven to 375 degrees F.
  • In one bowl, add flour, baking powder, sugar, brown sugar, and salt. Mix with fork until well blended.
  • In another bowl add the egg and whisk well, then add the vanilla, the mushed bananas, and the melted butter. (Don’t add HOT butter, instead let it sit for a minute or so after melting, so it won’t cook the eggs.)
  • Now fold the wet into the dry blending well with a spatula. Add the extra few teaspoons of cream if it seems a little too dry. Don’t overmix. Consistency should be like a thick cake mix batter.
  • Ladle into buttered muffin cups.
  • Bake at 375 degrees F for 20-23 minutes or until toothpick inserted in center comes out clean and edges are a light brown.
