Apple, Blueberry and Golden Raisin Galette


7 or 8 very small Gala Apples, peeled
and diced
¾ C fresh blueberries
1/3 C golden raisins
Zest from one whole lemon
3T fresh lemon juice
¾ C granulated sugar
¼ C brown sugar
¼ to ½ t cinnamon
Dash of nutmeg
3 T cold butter
Tiny pinch of ground cloves
1 box (makes 2) pie crust mix


  • Mix all ingredients to cloves (I start to add a little of the lemon juice and sugar as I dice the apples and place in the bowl, to keep them from turning brown before I’m done with all the apples), stir, let sit 10 minutes. Make the entire mix, roll out to large 14” circle, still keeping the dough thick. Place on buttered cookie sheet or on top of parchment paper on cookie sheet. Place mixture in center of dough, fold up edges, sprinkle with a little sugar on crust, top with butter. Place in 350 degree oven for 50 minutes, until golden brown. Let cool, serve with Vanilla Bean ice cream
