Whole Grain Citrus Parsley Croutons

Serves 8 | Great with salads, or to top soups


INGREDIENTS:

4 C cubed whole grain bread crumbs
Zest of 2 oranges
1/3 C rough chopped Italian flat leaf parsley
¼ t garlic salt
1 t kosher salt + ½ t black pepper
1/3 C plus of Arbequina Oil (or more to fully moisten


METHOD:

  • Preheat oven to 375 degrees F
  • Place bread cubes on a baking sheet covered with parchment paper and bake for about 10 minutes just to dry them out.
  • Remove from oven and place in a large bowl. Add the zest, parsley, salt and pepper and the garlic salt. Then the oil. Toss. Add more oil until you see oil on the bread covered by about half. Not soaked, just showing. Return to the baking sheet.
  • Place in the oven and toast for about 20 minutes. Remove and store uncovered for up to 5 hours until use with your meal that night. If you have to cover until the next day simply return them to a preheated oven and toast for about 10 minutes to dry out.

NOTE: Yummy served with salad, to top mashed potatoes, or with soup.
