Sriracha Mayonnaise Roasted Cauliflower & Red Peppers

A spicy and quick alternative for a crowd-pleasing side dish.

Serves 4


INGREDIENTS:

  1. 1 head cauliflower cut into small chunks
  2. ¼ C half n half
  3. 1 T olive oil
  4. 2 T sriracha (Can use more if you like it hotter!)
  5. ½ red pepper cut into strips
  6. 3 scallions cut into 2-inch angled strips
  7. ½ t kosher salt + ¼ t black pepper
  8. ½ t ground ginger

 

METHOD:

  • Preheat oven to 375 degrees F.
  • Combine the half n half, sriracha, oil, salt and pepper, and ginger. Stir well. Toss with the cauliflower, scallions, and peppers. Spread out on a baking sheet lined with foil.
  • Roast for 35 minutes.
  • Serve.
