Speedy Peanut Butter Cups With a graham cracker crust

Serves 5


14 ounces low fat Greek yogurt, Fage brand
2/3 C creamy peanut butter
3 t vanilla divided
2/3 C sugar
6 graham crackers
6 T of salted butter, melted
Fruit for garnish


  • Pulse the graham crackers in a food processer until they’re large crumbs. Add the melted butter and 2 t vanilla and press into 6 small glass serving cups. In a large bowl combine the peanut butter, the yogurt, the sugar and 1 t of vanilla. Mix well. Divide into each of the 6 cups smoothing the crème over the crust without pushing it into the dish. It should sit on top of the graham crust. Top with sugar dipped berries.
