Roasted Chicken and Pecan Salad

Ingredients:

3 ½ C shredded cold chicken. I used the chicken from my last roasted chicken
so it was well seasoned.
3 medium celery stacks, chopped
¼ to ½ sweet yellow onion diced
1 medium/large fuji apple, diced, skin on for color
½ C golden raisins
¾ C pecan pieces
1 t ground ginger


Dressing:

½ C plain greek yogurt
Juice from one lemon
½ C heavy cream
2 T cider vinegar
2 or 3 t yellow mustard
Salt and pepper to taste
Dukes mayo to moisten prop erly based on volume. I used about ¾ C


Directions:

  • Chop, mix, eat, enjoy!
