Quick Carrot Tabbouleh

A fresh twist on the traditional Tabbouleh and so quick with the use of a small food processor and the addition of either fresh or leftover rice. The perfect side with any main course, especially steak as shown here, or a yummy quick lunch for those who appreciate tons of flavor in every bite!


1 ½ C finely chopped Italian parsley

3 T chopped cilantro

1/3 C grated fresh carrot

1/3 medium green pepper diced

¼ C red onion diced

¾ C cooked white rice


3 T fresh lemon juice

2 T olive oil

1 t kosher salt

¼ t black pepper

1 T white sugar


  • Chop all ingredients and then toss with oil.
  • Add a bit of leftover rice if desired.
  • Serve with main dish.
