Pulled Pork Flatbread with Blackberry Ginger BBQ Sauce

The best pizza sauce ever! / Serves 4 / August 2023


INGREDIENTS:

SAUCE:

1/3 C OliveThis! Blackberry Ginger Balsamic Vinegar

2 T catsup

2 T packed brown sugar

Just a dash of nutmeg (less than 1/8 t)

 

FLATBREAD INGREDIENTS:

1 C pulled pork (I bought the pork pre-cooked from ALDI. Delicious!)

2 large Naan flatbreads

¼ C chopped fresh cilantro

¼ C angle chopped scallion, using the dark green parts

¼ C light oil divided (for garnish and rubbing on flatbread)

2/3 C shredded mozzarella cheese

1 t chili flakes

1/3 red onion, sliced thinly covered in apple cider vinegar and 3 T white sugar

2 ounces goat cheese softened


METHOD:

  • Combine the onions, sugar, and apple cider vinegar. Let sit for 2 hours to pickle. Drain. Set aside.
  • Combine the balsamic, brown sugar, catsup, and nutmeg in a very small saucepan. Bring to a soft boil and let simmer for 3-4 minutes, reducing heat so it doesn’t boil over. Remove from heat and let cool. Set aside.
  • Preheat oven to 475 degrees F. L Place both breads on a metal baking sheet. Brush generously with olive oil on top and bottom. Sprinkle each with 1/3 C of the shredded mozzarella cheese. Add ½ C of the cooked pulled pork. Arrange the pickled onion on each one. Sprinkle with the scallion, the chili flakes, and the cilantro. Bake for 7 – 8 minutes. Remove from oven. Add the goat cheese by pinching off about a teaspoon and arranging on flatbread, drizzle with a bit more oil, garnish with more cilantro and finish with a VERY generous drizzle of the beautiful blackberry ginger balsamic BBQ sauce!
  • Cut and serve.
