Pork, Cabbage, and Red Pepper Stir-fry With Ramen Noodles

INGREDIENTS:

1 package chicken flavored Ramen Noodle packet (keep the seasoning packet!)

8 ounces pork tenderloin steaks cut into thin strips

1 red pepper cut into thin strips

1 ½ C thinly sliced green cabbage

1/3 C sweet white onion diced

2 T fresh parsley chopped finely

1 large clove garlic chopped finely

4 T soy sauce

1 T rice wine vinegar

2 T light olive oil

1 ½ t Herbs de Provence seasoning

1 t kosher salt

½ t black pepper


METHOD:

  • Heat a large saucepan with water and bring to boil. Add the ramen noodles and boil until soft, according to package directions. Drain, put lid on. Set aside.
  • Heat a large sauté pan to high and add the oil. Add the pork and begin to sear the meat. Should take about 3 minutes. Then reduce heat to medium high and add the red pepper, cabbage, garlic, salt and pepper, Herbs de Provence seasoning, and Ramen packet seasoning. Let it cook, stirring occasionally until red pepper is soft and the pork is cooked through. Now add the ramen noodles, parlsey, soy sauce, and the rice wine vinegar. Cook until all is steaming hot.
  • Serve.
