Pineapple Cashew Black Rice Asian Salad


3 C cold, cooked black rice
1/3 C salted cashew pieces or whole salted cashews
½ C golden raisins
5 rings of canned pineapple, cut into
small pieces. Or 1 C of cubed canned
pineapple (reserve some of the juice)
Large handful of fresh cilantro,
chopped rough
1/3 medium white sweet onion
sliced very, very thin
1 large stalk celery chopped


¼ C rice wine vinegar
1 packet of chicken flavored Ramen Noodle
soup mix only. (None of the noodles)
1 T canola oil
1 t sesame oil
2 T juice from the pineapple can
Salt and Pepper as needed.


  • Combine all ingredients for salad, then compose the dressing and whisk. Mix it in with the rice salad and refrigerate for about 2 hours.
