Peanut Butter No-Bake Granola Cookies

Makes 12-14 | Gluten and Dairy FREE!!


Ingredients:

Raisin Pecan Version:

2 ½ T salted butter melted
½ C creamy peanut butter
1 C old fashioned oats
½ t vanilla extract
4 T sugar
½ t kosher salt
½ t cinnamon
2 T honey
½ C chopped pecans
½ C raisins


Chocolate Chip Rice Krispie Version:

2 ½ T salted butter melted
½ C creamy peanut butter
½ C old fashioned oats
¾ C Rice Krispie cereal
½ t vanilla extract
4 T sugar
½ t cinnamon
3 T honey
½ C semi-sweet chocolate chips


Method:

  • Melt the butter in a large bowl. Add the peanut butter, honey, sugar, vanilla, cinnamon, salt, and combine well. For version 1 add the pecans and combine. Add the 1 C oats sprinkling in the last 1/3 with care and stirring. You want a consistency where when you grab a small bit it comes together in your hand. Add a bit more if needed. For version 2, add the chocolate chips and the oats. Stir, then add the rice krispies, adding more until you can scrunch it into a ball. Krispies don’t hold together as well as oats, so play with ratio of krispies and honey until you can get them into a ball.
  • Form into 12 – 14 balls and set on a sheet or large plate. Cover loosely with foil. Place in fridge to set for an hour. They become very solid and won’t crumble when the butter and peanut butter are cold! (But they’re awesome to eat right out of the bowl!)
