Orange, Cardamom & Raisin White Chocolate Chip Cookies

Makes 20 Cookies


INGREDIENTS:

½ C shortening

1 large egg

1 ½ t vanilla extract

Zest of one large orange

½ C granulated sugar

¼ C packed light brown sugar

1 T fresh squeezed orange juice

1 C all-purpose flour

½ t ground cardamom

½ t baking soda

¾ t salt

¼ C golden raisins

1/3 C white chocolate chips


 

METHOD:

  • Preheat oven to 375° F.
  • In a stand mixer with paddle attachment combine the shortening, egg, vanilla, orange zest, and both sugars. Blend for about 2-3 minutes on medium high speed until creamed.
  • Add the orange juice and mix again until incorporated.
  • Add one third of the flour and the baking soda and cardamom and salt. Blend until mixed in. Add another third of the flour and mix well. Then the final third.
  • Once mixed add the raisins and the white chocolate chips.
  • Drop by rounded teaspoons onto a baking sheet covered with parchment paper. Bake for about 7-10 minutes until slightly browned on the edges.
  • Cool on a wire rack.
