Oatmeal, Cashew, Golden Raisin Spice Cookies

Ingredients:

½ C shortening
½ C confectioner’s sugar (powdered)
½ C packed light brown sugar
1 large egg
1 C all-purpose flour
½ t baking soda
½ t salt
¼ t Russian Seasoning (Penzy’s)
¼ t allspice
1/3 C golden raisins
¼ C cashew pieces
½ C long cooking oats
Dash of heavy cream


Method:

  • Preheat oven to 375 degrees F.
  • In a stand mixer combine the shortening, egg, sugars, and vanilla. Blend on high for about 2 minutes. Add the flour, soda, salt, spices. Mix well. Add the raisins, cashews, and oatmeal. Mix just until blended. Drop rounded balls about 1½“ wide onto non-stick cookie sheet. Bake about 9 minutes or until slightly brown on bottom.
  • Freezes well!
