Maple Sriracha Chicken Skewers Over Grapefruit and a Lemon Parsley Raita

Makes 10 – 12 Skewers | Bakes in the oven for an easy and elegant appetizer.


INGREDIENTS:

4 C chicken breasts trimmed and cut into long, slender strips
2 peppers (choose either red, yellow, or orange) chopped into 1 ½” dunks
1 large sweet white onion cut into 1 ½” chunks
1 large grapefruit cut into sections

Sauce:

1 C real maple syrup
3 T sriracha sauce (more or less to taste)
3 T grapefruit juice
2 t yellow mustard
1 T olive oil
3 T white wine like a Pinot Gris
1 t kosher salt, ½ t black pepper

Lemon Raita:

2 C Greek Yogurt
3 T fresh squeezed lemon juice
Zest of one large lemon
3 T finely chopped Italian leaf parsley
¼ t black pepper


METHOD:

  • Preheat oven to 425° F.
  • Make lemon raita. Set aside.
  • Mix the maple syrup, sriracha, grapefruit juice, mustard, wine, and salt and pepper. Whisk well
  • Cut up grapefruit by slicing off all peel. Cut into sections for serving. Reserve a portion of the grapefruit to extract about 3 T grapefruit juice for the maple Sriracha sauce. Set aside.
  • Cut the pepper and onions.
  • To assemble skewers, begin by adding a piece of chicken, piercing it 2 to 3 times as you fold it and push it onto the stick, until it is a bit of a chunk on the skewer. Add a portion of pepper, then a large chunk of onion, then pepper. Then repeat. You can use a ratio of chicken to pepper/onion at your leisure. Can make skewers large for a MAIN COURSE or use only 1 couple of pieces of chicken for smaller APPETIZER servings. Place on a foil lined baking sheet. Now brush with the maple sriracha sauce using all the sauce. Bake in oven for 25 to 35 minutes or until chicken is done. DO NOT overcook.
  • To serve, spread the lemon raita over a platter. Dot with the grapefruit sections. Place a skewer over that.
