Kale Pesto, Red Pepper and Honey Goat Cheese Pastry Bites

Makes 16


Ingredients:

1 sheet Pepperidge Farm Puff Pastry
½ C Kale Pesto*
½ C thinly sliced roasted red peppers (Bottled is fine. Just drain and pat dry.)
1 3 ounce package honey goat cheese
1 T kosher salt
1 egg, beaten
Flour to dust surface


Method:

  • ​Thaw dough as directed. Or use your own dough. Roll out to about a 12 by 12 square. Cut into 16 squares, or so that each square is about 3”X3” plus or minus, which will make it easier to fold them over and seal and place them all on a large baking sheet. Working quickly, spread the kale pesto smear in the middle of the dough, keeping it about ½ inch from the edged. Top with about 2 small strips of the red pepper which you have cut into ¼ inch strips. Then top with a dot of honeyed goat cheese. Beat the egg and using a brush, brush a line of egg on the short end of the dough. Bring the other side over the top of the ingredients and seal well with fingers, tucking in any fillings that are stubborn. Don’t overfill! Now put the remainder of the egg wash on the tops of the bites. Sprinkle with the kosher salt; a little on each one. Place the sheet with the sealed bites, back in the fridge for 20 minutes minimum. Preheat your oven to 400 degrees. Cook for about 15-18 minutes or until browned. Serve!!!
