Double Chocolate Chip and Marshmallow Cookies

Ugly but Delicious

Makes 3 dozen small cookies


Ingredients:

½ C butter flavored shortening
½ C granulated sugar
¼ C brown sugar, packed
1 t vanilla extract
1 egg
1 C all purpose flour
2 T unsweetened cocoa powder
¾ t salt
½ t baking soda
½ to ¾ C semi-sweet chocolate chips
½ package mini marshmallows


Direction:

  • Preheat oven to 375 degrees F.
  • Mix the shortening, sugars, vanilla and egg and cream until smooth. Add the cocoa powder and dry ingredients and mix very well. Add the chocolate chips and then drop by teaspoonfuls onto a cookie sheet, dotting each cookie with three miniature marshmallows. Cook for 6 and a half minutes.
