Baked Salmon with Mandarin, Brandy, Herb Rub

Serves 6


6 6 oz. Atlantic salmon filets
Zest from one large Mandarin orange
2 T juice from Mandarin orange
3 T Froelichs’ Herb Rub
1 T chopped parsley
2 large garlic cloves finely chopped
1 T brandy liquor
1 T honey
1 T oil
1 t kosher salt
½ t black pepper


  • Pat salmon filets dry. Set aside.
  • In a small bowl combine all other ingredients until it is a wet paste. Add more of the Froelich’s if needed. Spread paste all over salmon. Top with slices of orange. Bake at 425 for 6 minutes. Serve with roasted asparagus and bean salad.
