Apple Curry Lamb Burgers

INGREDIENTS:

1 lb ground lamb

1 small Gala apple cut into a small diced

¼ C white sweet onion

½ t Penzy’s Curry Now curry powder (or other quality curry)

1/2 t coriander powder

1 t kosher salt

½ t black pepper

¼ C chopped Italian leaf parsley

¼ C fresh squeezed lemon juice

2 T light olive oil


METHOD:

Combine all ingredients except the lemon juice. Form into patties. Bring a saucepan to high heat and add the oil. Sear the patties on each side until interior of patty is 165° F. Adjust heat as needed so patties don’t burn. At the very end, pour in the lemon juice and stir until it has mostly evaporated.

Serve over greens and seasoned rice of your choice.
