Fresh Salmon Burgers with Lemon and Capers and a Curry Mayonnaise

INGREDIENTS:

 

1 1/2 lb Atlantic salmon filet cut into large chunks

Zest from a lemon

2 t capers

1 T Italian breadcrumbs

1 T Dijon mustard

1 large garlic clove, chopped

1/2 T grated ginger

2 T chopped parsley

1/2 T kosher salt + 1/2 T black pepper

1/4 t Trader Joe’s 21 Seasonings Salute

1/4 C mayo

1/8 t good curry powder like Penzy’s

Sweet chili sauce to garnish


METHOD:

  • In a small food processor, add the salmon and blend until chopped, and is the consistency of ground chicken. Add to a large bowl and add ingredients from lemon zest to Seasoning Salute. Blend well with spoon or hands. Form into 6 to 8 small patties.
  • Add 2 T of olive oil to a hot pan. Fry each for about 2 minutes on each side. Serve sandwich style with a slather of the curry mustard and a generous dribble of the sweet chili sauce.
