Cranberry Orange Scones with Orange Glaze

Inspired by Southern Living

Makes 8


Ingredients:

2 C all-purpose flour
1/3 C sugar
½ C salted butter
1 T baking powder
1 C heavy cream
1 t vanilla extract
½ t salt
Zest from one orange
1/3 C dried cranberries


Glaze:

juice from one orange and add
powdered sugar until the proper runny
consistency


Method:

  • Preheat oven to 450 degrees F using convection setting. In one bowl combine the flour, sugar, baking powder and salt. Cut the cold butter into ¼ inch chunks. Work it into the flour mixture with hands until incorporated and only small pea size chunks remain. Work in the zest. Now chill dough in freezer for 10 minutes. (This is a critical step!) Remove from freezer and immediately stir in ¾ of the cream, blending with a large spatula only until incorporated. Add the cranberries that you had a in a bowl with a bit of flour which keeps them separate when you add them in the dough. Work them in evenly. Then add last of the cream if needed. The dough will look crumbly. But will hold together when you press it into your hands. Dump dough onto floured surface. Quickly form into a circle, press down and keep forming until all the dough is together in the circle. Cut into 8 wedges. Place on parchment on a baking sheet. Bake for about 13 minutes or until golden brown. Let cool for about 10 minutes. Remove, and drizzle glaze.
